Leo Hillinger Cabernet Sauvignon Terroir 2021 Organic, 0,75 l

Cabernet Sauvignon can be truly exciting in Burgenland – especially if you give it enough time. That is precisely what Leo Hillinger does with his Cabernet Sauvignon from the dream vintage of 2021. The result is a full-bodied, well-structured red wine with plenty of dark fruit, spice and real depth.

After harvest, the organically grown Cabernet Sauvignon grapes are fermented on the skins in stainless-steel tanks and remain in contact with the skins for a total of five weeks. The wine is then allowed to mature for a full 24 months in French oak: one-third of the barrels are new, whilst two-thirds have already been used. This gives the Cabernet its spicy depth without the fruit being overpowered by the wood.

In the glass, it is very typical of the variety. A dark garnet red with violet highlights. The nose is dominated by cassis and dark berries, accompanied by cedar. On the palate, ripe raspberries and preserved dark fruits come to the fore, along with a hint of bourbon vanilla and dark chocolate. Ripe, robust tannins provide structure, whilst the acidity gives the wine a lovely balance despite its power. The finish is long and spicy.

A Cabernet for hearty dishes: perfect with a good steak, braised game or mature hard cheese. And definitely a wine that will benefit from a few more years in the cellar.
