Shilda Winery Kirke - Saperavi 2022, 0,75 L

Saperavi is an ancient and indigenous red grape variety from Georgia, renowned as one of the most important in the Kakheti region.

This "dark harvest" follows a time-honoured tradition: during the full moon, when the berries are perfectly ripe, they are carefully hand-harvested by women. The grapes are then transported to the cellar before sunrise, while still cool, and matured in steel tanks with some portions aged in traditional clay amphorae.

In the glass, the wine showcases a deep ruby-red hue. On the nose and palate, it is clean, dry, and inviting, with classic aromas of ripe cherries, plums, and a hint of blackberries. The finish is fresh, with a touch of black pepper that lingers. Its well-balanced structure is immediately appealing, offering a wine that is both accessible and intriguing without being overwhelming.

For those unfamiliar with Saperavi, this is an excellent introduction. Offering great value for money, it pairs beautifully with game, lamb, sausage, or aged cheeses—making it a versatile and delightful choice.
