A few years ago, a small group of catering professionals in Copenhagen set out to redefine the non alcoholic beverage experience. They created a range of sparkling, refreshing alcohol free wine alternatives, known as proxies. To achieve distinctive flavour profiles, they use traditional fermentation, further refined with innovative technical approaches.

Slightly cloudy and lively in the glass, the Proxy appears restrained at first, but its intense flavour quickly unfolds into an aromatic journey. Ginger adds gentle heat, Thai basil contributes a floral spiciness reminiscent of aniseed, and red grapefruit provides fresh, fruity acidity for an extraordinary taste experience.
